A simple pesto wrap…
Do you like pesto? I LOVE pesto. But not the regular jar of it that you can buy in HyVee, but a homemade one with basil, garlic, almonds and olive oil. Here I’ll share my recipe with you! And you can make it even if you live in the dorms! (As long as you have access to a food chopper which is cheap and you can get in Walmart 😉 ).
– 3 cups of fresh basil
-1/2 cup of raw almonds
– 1 garlic clove, chopped
– 1 teaspoon of sea salt
-1/2 cup olive oil
– 2 tablespoons fresh lemon juice
In the food chopper, add the basil, almonds, garlic and salt and pulse. Gradually add the olive oil, until the mixture is finely chopped but still has some texture. Then, pulse in the lemon juice.
What can you do with this pesto? A fresh pesto wrap!
-Whole wheat tortilla wrap (super cheap)
– 1 Roma tomato
– Romaine lettuce
– Deli chicken
You’ll take a tortilla wrap, spread about 1 tablespoon of the pesto. Then, add some deli chicken on top, about three thin slices of the tomato, and a lettuce leaf. Then, roll it up pretty tightly and enjoy! This makes about 4 wraps. The pesto lasts you a whole lot more though! So, put it to some good use. This makes the perfect snack when dining centers are closed! Get with it!
